Vegan Cherry Ripes

Ingredients
  • 600g glace cherries
  • 400g moist coconut flakes
  • 20ml melted coconut oil
  • Red food colouring
  • 200g vegan dark chocolate
Instructions
  1. Make sure that there are no stones in the glace cherries
  2. Blitz in a food processor
  3. Add the coconut flakes and coconut oil
  4. Blitz until all chopped finely and combined
  5. Add enough vegan gel red food colouring to get a rich red colouring.
  6. Blitz again.
  7. Place baking paper into a baking pan and add the mix. Press into the corners and flatten
  8. Place into the freezer until frozen
  9. Once frozen, cut into the desired size.
  10. Temper the chocolate (see instructions)
  11. Dip the frozen cherry ripes into the melted chocolate and then place on a piece of baking paper. 2 forks work well to dip the cherry ripes and remove from the chocolate.
  12. Place into the fridge until chocolate is solid.
  13. Keep in the fridge (or freezer) until required.
