Hummus

I LOVE Hummus! My husband has never been a fan though until about 6 months ago and now he can’t get enough of the stuff. As a quick, light dinner we sometimes have felafels with salad wrapped in tortillas and my husband loves it! I am amazed that he is eating hummus almost as much as I am amazed he is eating felafels. I am not complaining though because I get to eat it more now.  Hummus is so easy to make and really handy to have in the fridge. You can use it with other meals such as smearing it on the tortillas before rolling up your wraps, serve with your favourite salad or just sit down at lunch with a big bowl of hummus and your favourite veggie sticks and enjoy.

Ingredients
  • 400g can chick peas
  • 2 tbs tahini
  • ¼ cup lemon juice
  • ¼ cup of water from chick pea can
  • 1tbs olive oil
  • 1tsp sea salt
  • 1 clove of garlic
Instructions
  1. Open can of chick peas and drain juice, leaving about a ½ cup of juice.
  2. Place chick peas in a bowl and heat in microwave for 30 seconds. This is the trick to light and creamy hummus. I don't know how it does it but my hummus is better than it has ever been since I have been warming the chick peas.
  3. Place chick peas in stick mixer or food processor & add the rest of ingredients. Blitz until smooth, stopping to scrape down sides if necessary.
  4. The hummus should be smooth, light and creamy. If not, add another splash of chick pea water and blitz again. Taste test to make sure you are happy. You can tweak the recipe now if you feel it needs more of anything.
